Cake with sour cherries


         I thought often what fragrance would fit for a perfect day at beginning of summer.Sun shines on perfect blue sky background, no shadows, no clouds. In middle of the garden, the old sour cherry tree that grandfather once planted, proudly displays the cherries.  I think of my grandmother, of the irresistible smell coming from her kitchen when I was a kid. Perfect flavor of vacation days when you have nothing to do but enjoy life: cake with cherry flavor, fresh out of the oven.

Let's have look in her old notebook, to make a perfect summer day, sweet flavored childhood dream.

Cake with sour cherries
 
We need:

  • 4 eggs,
  • 1 cup granulated sugar,
  • 2 cups flour
  • baking powder,
  • 1/2 kg cherries,
  • zest of one lemon.
  • 1 cup sour cream

Oh, but it is a very simple and healthy recipe! Certainly sour cherries, red fruit with a sweet-sour, impossible to forget fragrance, are among the favorite fruits of many. Even if they are more acidic than cherries, sour cherries contain less sugar than these. Potassium they contain help to provide an optimal amount of energy the body, and burn calories. It also acts positively if cardiovascular disease, improving blood circulation. They have a cleansing effect on the body, helping to remove toxins from the body and especially the kidneys.

But let's see how to make the cake:

In a bowl, rub the sugar and the 4 yolks for 20 minutes, add cream, 2 cups flour and some baking powder, in order to get a fine composition.
           Grease baking tray with some butter, coat with flour.
           Pour composition in the tray, put cherries cleaned, without kernel and sprinkle some sugar over them.
          Insert tray in the oven and bake the cake. Time needed depends on your oven, but you know, my grandmother had no modern oven with clock, nor any baking temperature measurement and anyway these are boring activities. I think that to answer such a question, she would say: "until golden brown, on medium heat, and to know for sure how long to bake, sting cake with a straw and if no dough remains stuck on it, it's over ".

After baking the cake, take it out of the oven, beat egg white foam from the 4 eggs and put it over cake, then introduce the cake back in the oven for another 5 minutes. Allow to chill.

Cut in shape of cubes. Serve on a dish, with a bowl of cherry ice cream.

Do not forget to close your eyes for a moment as you taste the first bite: you will a feel the perfect flavor of summer days, sitting in the garden under the old cherry tree.
